It’s Time To Experiment With Your Favorite Fruit This Summer- Mangoes!

  • Slice it, cube it or have it whole, the fruit satiates your taste buds like none other. This month, ensure you have your mango doors in abundance to new and old recipes.

In the month of May, other than happiness of laid back vacations and spending time with family, there is one activity that is common in every household.The celebration of the fruit, MANGO. Mangoes like most fruits, holds health benefits that work wonders for all.

Mangoes tend to decrease obesity and helps improve the quality of one’s hair.

Mango Mania

There are multiple ways of curating dishes using mangoes. Raw mangoes are used extensively in different cultures for savoury dishes.
The basic idea is to pair it with ingredients that balance the tartness and sweetness of unripe and ripe mangoes respectively. Try to keep them Chunky, you would want to get the mango taste in the dish. Mangoes also work great in marinades, especially for meat.

However, be careful to consume the dish quickly, as the enzymes in mango can over tenderize the meat, making it mushy.
Each cooking style brings out the different taste altogether. To enjoy the bold, rich flavours of mangoes is by eating them fresh. There are several ways to prepare a mango dish, be it sweet, savoury or spicy, mango goes well with any style of cooking.
Ripe mangoes can be cut and used in deserts for salads and various dressings and beverages. Raw mango can be used to make Salsas. These salsas are lovely when paired with grilled chicken or seafood. Salads and beverages using raw mango are good option for lunch. Whereas deserts and smoothies are excellent post dinner. Do you know mango also enhance the flavour of a prawn curry.

Do you know mangoes are beneficial for our health too, this is how they help:

  • Mangoes contain antioxidants known as lutein and zeaxanthin which prevent macular degeneration which can lead to blindness.
  • The vitamin C in mangoes prevents premature aging.
  • The vitamin C in mangos helps maintain healthy teeth, bones and gums.

So let’s do these experiments with mango:

Mango baked yogurt

Ingredients
400 ml heavy cream, 400 gm condensed milk, 400 gm yogurt.

Method
Preheat the oven to 160°C. Bring all the ingredients together. Blend it well. Pour onto the mold. Bake at water bath at 160°C for 10 minutes.

Palak aamras chat

Ingredients
10 spinach leaves, 10 gm diced onion, 20 gm diced deseeded tomato, 10 ml tamarind chutney, 15 gm nylon sev, 10 gm fresh coriander, 15 gm roasted moong dal, 10 gm pomegranate seeds, 50 gm aamras that is mango pulp or puree, 2 gm chat masala, 1 gm black salt, 20 gm cornstarch, 20 gm flour, 1 gm carom seeds.

Method
Take washed spinach leaves and pat them dry. Make a runny batter with the cornstarch, gram flour, carom seeds and salt. Slightly put the spinach leaves in the batter, take out and deep fry. Place the deep fried spinach leaves on the service platter, sprinkle some chat masala, black salt on the leaves. Top the crisp leaves with the onion, tomato and pomegranate. Drizzle the leaves with tamarind chutney and aamras.

Fresh mango clafoutis

Ingredients
2 mangoes, 4 eggs , 150 gm sugar, 30 gm flour, 20 ml cream, 1 vanilla pod , 5 gm butter.

Method
Preheat the oven at 150° C. Grease the mould and dust it with a little bit of sugar. Peal the mangoes and roughly cut them into medium-sized cubes. Mix the whole eggs, flour, sugar, cream and Vanilla seeds together. Add your mango cubes to the mixture and put it in the greased molds and place in the oven for 40 minutes. Allow to rest and serve warm in the cooking mold.

Mango and peach smoothie

This smoothie recipe is very tasty and attractive once prepared. It also contains all the proper ingredients that are required for weight loss and detoxification. The ingredients are rich sources of vitamin A and C. These vitamins also assist with combating colds and flues.

Ingredients
1/2 cup almond milk, 1/2 cup frozen mango, 1 peach (halved). 1 cup water, purified, 1 teaspoon flaxseed, A few ice cubes.

Method
Put mango and peach into a blender and blend on low for approximately 2 minutes.
Add the rest of the ingredients and blend until they are well combined.
Pour into a tall serving glass.

You will find that this smoothie recipe is very simple to prepare. You can have this smoothie at breakfast time or just a beverage to sip on during the course of the day to keep you going and energized. It is also the perfect beverage for those hot summer days.
