  • 4 medium-sized potato
  • ¾ tsp salt
  • ¼ cup cornflour
  • 2 tbsp oil
  • ½ tsp pepper (crushed)
  • ½ tsp Kashmiri red chilli powder

  • ½ tsp mixed herbs (basil, rosemary, sage, thyme, marjoram, oregano)

Method

Peel the potatoes, and chop them to the shape of a thick wedge. Now, boil the potato wedges for 3 minutes in salted water. After that, let the water drain and keep the potatoes aside. Add a little bit of oil to the boiled potato wedges. Now, add cornflour, pepper, chili powder, and herbs of your choice. Mix it well till the wedges get a nice coat. Now, you can either bake it in an oven at 180 celsius for 15-18 minutes or till the potatoes are golden and crisp. OR, you can deep fry it in hot oil. Ingredients

  • Mozzarella cheese (1 cup)
  • cheddar cheese (about 2 cups)
  • 1/4 to 1/2 cup chopped green onion (to taste)
  • 1/4 cup mayonnaise
  • 1 Tbsp sour cream (optional)
  • 1-2 cloves garlic, minced
  • 1/2 stick unsalted butter (1/4 cup, 2 ounces), slightly melted
  • French or Italian bread

Method

Take a bowl and add the melted butter and garlic, and mix it properly until smooth. Now, take another large bowl to prepare the topping. Add both kinds of cheese followed by green onion, mayonnaise and sour cream, and the butter mixture. Preheat the oven or broiler for about 3-5 minutes, spread the loaf of bread, and slice it in half horizontally, now spread the cheese mixture over the bread. Ingredients

  • 400 gm mutton
  • 2 egg
  • 1/4 teaspoon cinnamon
  • 5 tablespoon ghee
  • 1/2 cup chickpeas
  • water as required.

For Marination

  • 2 cup onion
  • 1 teaspoon mace
  • 2 powdered black cardamom
  • 1/2 teaspoon nutmeg
  • 2 teaspoon cumin seeds
  • 5 clove
  • 5 green chilli
  • 1/2 teaspoon powdered black pepper
  • 1 teaspoon garlic paste

Method

First of all, wash the mutton and put it in a pressure cooker to boil. Now, chop the coriander leaves, green chillies, and papaya. Also, grate nutmeg and finely slice the onions.

Now the mutton is boiled, let it cool and mice in properly using a mincer. Grind the roasted chickpeas and cinnamon to give it a fine texture. Take a frying pan and add ghee to it. Once the pan is heated, add thinly sliced onions into the pan and fry it until brown colour. Now take a large bowl to mix all the ingredients along with the minced mutton and fried onions. Keep the marinated mixture aside for 2-3 hours.

Now, put this mixture in a grinder and grind them well. Now add powdered roasted chana and cinnamon, then add eggs and mix all the ingredients nicely. Refrigerate the mixture for 1-2 hours. Now put the mixture onto skewers and shape them into kebabs. Preheat the oven and place the kebabs into a baking tray and bake them for20 minutes at 260 degrees Celcius.   • 2 cups kidney beans, cooked
  • 1 teaspoon salt
  • 2 tablespoons chili powder

  • 2 large chopped tomatoes

  • Paneer 15-16 cubes
  • Ginger-Garlic Paste 1 tbsp
  • Salt 1 tsp
  • Coriander Powder 1 tsp

  • Kashmiri Red Chilli Powder 2 tsp

Method

Cut the paneer into one and a half-inch squares with a thickness of half an inch. Mix ingredients and marinate the paneer cubes in it for about 45-60 minutes. Now, thread the chunks of capsicum, onion, and paneer alternatively on the skewer. Preheat at 230 degrees celsius for 15 minutes. Place the skewers on the baking tray.   • 1 cup Potato (Boiled, peeled, and grated)
  • 200 g Paneer (Grated)

  • 4 tbsp Cornflour

Method

Take a bowl and add potato, paneer, cheese, salt, coriander, cornflour, and garam masala and mix them. Make small balls out of this mixture. Dip the balls in the paste and roll it over the bread crumbs. Deep fry in hot oil till golden brown. Take them out and place them on a kitchen towel. Serve these hot and crisp cheese balls.   • 2 eggs, beaten
  • ¼ cup water
  • 1 ½ cups Italian seasoned bread crumbs

  • ⅔ cup all-purpose flour
  • ⅓ cup cornstarch
  • 1-quart oil for deep frying
  • 1 (16 ounces) package mozzarella cheese sticks

Method

First of all, mix the eggs in a bowl with a little bit of water. Take garlic salt and bread crumbs in a medium bowl and mix it well. Mix cornstarch and flour in another bowl. Now, take a saucepan and heat the oil. Coat each mozzarella stuck in the flour mixture then in the egg mixture and lastly in the bread crumbs. Ingredients

  • 1 sweet potato, peeled and cubed
  • 2 tbsp olive oil
  • 1/2 teaspoon chilli powder
  • 1 x 380g carton black beans, drained and rinsed
  • 125g Greek yogurt

  • 1 garlic clove, chopped

Method

Preheat the oven to 200°C, fan 180°C. Take a large baking paper to spread on a baking tray. Saute the sweet potato with chilli powder, and olive oil, and season. Roast for about 20-25 minutes until golden brown. Now heat the black beans in a pan with 2-3 tablespoons of water for about 5 minutes. While the sweet potato and beans are cooking, mix the yogurt, avocado, garlic, and lime juice and give it a good grind. Season to taste and chill until ready to use.

Warm the tortillas, then assemble the tacos with a scoop of the avocado yogurt sauce, followed by the roasted sweet potato, and black beans. Finish with coriander and wedges of lime.

10. Baked Onion Rings

  • 1 yellow onion
  • 2 egg whites
  • 2 tablespoons milk
  • 1 pinch cayenne pepper, (or to taste)
  • 3 cups panko bread crumbs
  • ½ cup of all-purpose flour

Method

Preheat the oven to 230 degrees C. Separate all the onions into a single ring. Take egg white and milk in a bowl and whisk it thoroughly. Add a pinch of cayenne pepper.

Put the onion rings into a resealable bag. Add flour, salt, and black pepper; seal bag and shake until rings are well coated with flour. Drop all the coated onion rings in the egg white-milk mixture and now drop in the panko crumbs and toss the onions until they are coated evenly. Place the rings onto the baking sheet.
